The juice from sugarcane is first extracted then concentrated after which the solution is crystallized. Crystals are then centrifuged to remove most of the cane molasses. This raw form of sugar is less processed than table sugar. It contains minerals like phosphorus, calcium, iron, magnesium and potassium. It has rich and complex flavor.
